Recipe: Salad Niçoise

Besides the beautiful scenery, one of my favorite things about my recent trip to Nice, France, was the wonderful Mediterranean food! I love seafood and there was plenty of it. Just add vegetables and eggs and you get the classic Salad Niçoise. As you can see by the pictures below, I had quite a few versions during my trip. Below is an easy recipe for you to make it at home!

Recipe: Salad Niçoise

Just mix the following ingredients according to taste!

Greens (lettuce, arugula, baby spinach)
Sliced tomato
Kalamata olives
Sliced radishes
Hard-boiled eggs
Canned tuna
Canned sardines
Sliced green onion
Olive oil + balsamic vinegar for dressing
Salt and pepper

Enjoy with a glass of wine overlooking the beach!

Long weekend in Nice, France

My friend, Neena, and I met some of my classmates from the INSEAD 15J class on a trip to the South of France. We Flew Into Nice for a long weekend and had a great time on the Côte d'Azur (French Riviera). As you can see by my pictures, it is a beautiful place, and a long weekend isn't enough to soak it all in. Of course, we had a great time and did a lot of things, including relaxing.

Many of us were tired from traveling so we slept in and then had a late lunch on the beach. There are many great restaurants/beach clubs along the water in Nice. My favorites throughout the trip were Plage Beau Rivage and Opera Plage. This was my first time in the Mediterranean and the beach surprised me a little because it was rocky but the water was so blue.

We woke up early the next day and took an easy hike to the castle just atop old town. The castle ruins of Nice are on a hill and provide spectacular views of the city. It's also a great workout! Afterwards we stopped at the market to pick up some ingredients for lunch. In the afternoon, we took the bus to Monaco, more on that later!

After a night of partying on the beach, we decided to take the day to relax on the beach again. This time we rented cots at the plage, which was totally worth it. I didn't want to leave paradise but we had to fly out that night to head back to Paris, where it was unfortunately cold.

One night in Vienna

Earlier this month, I visited my family in Slovakia before making my way to start business school at INSEAD in France. I flew out of Vienna (only an hour away from Bratislava) and spent the night to catch up with some of my colleagues that work at the International Atomic Energy Agency.

Vienna is really such a great city and consistently voted one of the best places to live in the world. It is clean, has great public transit, and of course has that wonderful old European charm. There are plenty of outdoor spaces, pedestrian streets, and the whole city is very dog-friendly. Plus, I was born in Austria so it's a special place for me!

After taking a walk we ended up at Rathausplatz, which always has something going on. From the food festivals (above), to ice skating, to motocross and of course the famous Christmas markets. I'll be back in Slovakia for the holidays so hopefully I can spend some time in Vienna again!

Bratislava, Slovakia

I spent my final days in Slovakia visiting my aunt, uncle, and cousins in the capitol city of Bratislava. Much of the city contains Soviet-era architecture mixed with modern buildings. However, the old town area near the castle is especially charming and reminds me more of other cities in Europe. Here's some pictures!

Notice the U.S. embassy in the background!
